Compote again

Wow, I have just realised how little I have posted over the past 4 months. I totally blame that on my pregnancy. Being pregnant is a tough gig, especially when you try to juggle a busy job with no support from your bosses. Fortunately the end of nigh and I’ll be able to relax and focus on the arrival of baby.

I’ve got the day off today as I really needed a break as the current heat wave we are having in London is really knocking me down for 10. Plus I needed to go but the pram for baby.

But before I get cracking with any of that, I needed to get my daily fix of home made compote.

I love compote — or fruits purée if you prefer.

It starts with apples cut in little chunks that I put in a small pan with a knob of butter. After 10min I add about 1/3 cup of water, then I add whatever fruits I fancy. Today I had cherries. I just removed the stone and let it summer with the apples until everything was soft. Then I let it cool down and put it in the blender.
